Pipped cookies can be a lot of fun and can allow for some 3D fun because some of the cookies can be made with some height, meringues can be made this way. This is possible because they are formed using a piping bag.
Using a piping bag also allows for some creativity with color as many of these types of cookies can be colored.

These are amazing with a traditional filling like Lemon Curd, french butter cream or dark chocolate ganache or filled with any number of non-traditional fillings.

Is this a cookie or a candy? It's texture is similar to a crisp cookie but there is no flour in them at all.
I make a lot of recipes that use egg yolks which means I have a lot of egg whites left over. These "cookies" are an easy way to use up the whites.
The recipe is based on 1 egg so it's very easy to scale up.
