Instant Pot - I have the 3 quart and 8 quart pots and those sizes work REALLY well for the way I cook. I would recommend starting with the 6 quart for most people, it's the most common size and the size most recipes are written for.
I am generally NOT a kitchen gadgets person. When I buy something for the kitchen, I want to be sure I'm going to use it over and over again. I honestly didn't think I would use an Instant Pot very much, it looked like another fad product to me and I didn't see much point in it. It took a lot of people I know to convince me that it was a gadget worth having. They were right. I generally use one of my two Instant Pots, at least, once a week, generally more. This product has nearly replaced my slow cooker (another product I never thought I'd buy, and maybe shouldn't have as it really doesn't get used very much) because it can, mostly, cook the same things in a lot less time.
Spare Liner - I have one for each of my pots and the spare liners are frequently used. I try to keep a clean one in the Instant Pot base at all times so I don't accidentally put food or liquids in the base itself.
Extra Seals - I have one color for savory dishes (red) and one for sweet dishes (blue). The seals do pick up odors and I don't want desserts to smell like onions, etc. Be sure to remove the seal from the lid when you're done cooking, wash it and store it loose in the upside down lid. Don't install it until you actually are ready to cook. This will give the seal and ring a chance to air out.
Steamer Basket - Veggies and hard boiled eggs are excellent when cooked in the Instant Pot having a good steamer basket with a handle makes cooking these kinds of things that much easier.
Glass Lid - I use this a lot when I make yogurt and for storing foods in the liner in the fridge. You don't have to get the glass lid from Instant Pot, any lid that fits well will do. I don't have glass lids for any of my other cookware but I prefer a glass one for the Instant Pot.
The Yogurt Tube - I make yogurt in the Instant Pot more than I make anything else (homemade is a lot cheaper than store bought and tastes batter too). I make a batch at least every two weeks sometimes more. Whenever I make it, I strain it (homemade yogurt is not as thick as store bought). When I strain it, I always use The Yogurt Tube. This strainer is absolutely amazing and allows you to make your yogurt as thick as you like.
Stacked Pot-in-Pot Kit - I don't use this a lot but it is nice to have for reheating foods and cooking things like rice and sauce at the same time.
Raised Trivet - This works well for pot-in-pot cooking or bowl-in-pot cooking when you need a little extra space under the bowl or pan you place in the liner. I found ones that hold eggs for making hard cooked eggs but I prefer just using a steamer basket for cooking those.
A lot of other Instant Pot cooks don't have too many other accessories beyond these and I would agree with that philosophy. I'm really glad to have the spare liner, extra seals, steamer basket and lid but the other items beyond that don't get used a lot and I could probably manage without them.
