I am perfectly happy eating cake without frosting but it's so much better with frosting.
You won't find a recipe for American Butter Cream Frosting here because I REALLY don't like it. The closest frosting I make to American Butter Cream is probably Marshmallow Frosting which is just as sweet but has a better texture.
This is my favorite frosting to date because it's a LOT less sweet than any other frosting I've made. Be aware that this may not hold up well in warmer months/climates.
My Grammy Wilda used to use this as both a frosting and a filling for cakes and other desserts. She also used to call this Whipped Cream Frosting but it doesn't have any cream in it so I renamed it. Hmm...I wonder...what if I did actually make this with cream?...hmm!?!
Tangy and sweet all in one, this is a wonderful topping for carrot cake, of course, but equally good on many other fresh fruit cakes and layer cakes.
This recipe is very forgiving if you happen to run short on an ingredient and has a less sweet and more sweet version right into it. I tend toward the less sweet version for most things.
