Who doesn't love a great cookie? I know I do. As for gluten-free cookies, I've had some store bought gluten free cookies that are very good, some that were pretty good, but many were just not worth bothering with. I'm not a fan of dry, gritty cookies and many of the store bought GF cookies I tried were very dry and crumbly and surprisingly gritty. Fortunately, that has changed over the last few years and there are some very good GF cookies on the market today.
Bad store bought cookies was one of the things that got me to start baking my own gluten free goodies. I've spent a lot of time trying to perfect my GF recipes so they will be as close to wheat based cookies as possible. Because of this, I now have a few flour blends that work very well for cookies.
As with my other formulas, some of these recipes are a work in progress, but most of what you'll find below are really close to the wheat versions they are based on.
