Breakfast is important, at least it is to me. Most days I just have a bowl of cereal and an egg, except on Sundays. On Sundays with the kids or for special occasions I like to make a "classic" American breakfast (whatever that means). For me that means including one or more of the following.
Aebleskiver (meaning "apple slices") are Danish pancakes in a shape of balls that are cooked on the stove top in a special cast iron pan.
Anyone who knows me well knows that I generally don't like American style pancakes, buttermilk pancakes may be the exception. Properly cooked aebleskiver are much better, honestly, a lot of fun to eat and can be filled with things like apple slices.
These require a bit of learning curve in addition to an aebleskiver pan. If you decide to give them a try, don't give up if your first few batches don't come out perfect, keep trying.
I love a hearty breakfast, although, I usually keep it simple. If I need to bake for a small crew of people and I don't have a lot of time, I will often make this recipe.
It's basically a quiche with potatoes as a substitute for the pie crust.
I generally make this recipe close to what's written with an occasional addition or subtraction. This recipe is very forgiving so you change things up as needed. Keep the custard ratio close to what's written, but even that can be changed a bit.
As a general rule, I have not been a fan of rolled oats oatmeal. I know many people love it.
Years ago I finally decided to try steel cut oatmeal and I found it to be very different from the rolled oats. I quickly fell in love with it and I make it quite often.
Somewhat recently, a friend of mine suggested I try sprouted oats, and much to my surprise, I like these oats too.
You can do a lot with waffles, they aren't just for breakfast. My favorite way to eat them is hot off the iron, topped with plenty of butter (allowed to melt completely) and REAL maple syrup. Of the recipes in this set my go to version is #1.
