1 (2 ½ lbs) cauliflower, cut into 2” florets
⅓ cup extra-virgin olive oil
Kosher salt
Ground black pepper
Preheat the oven to 400°F.
On a large rimmed baking sheet, drizzle cauliflower florets with olive oil. Season with salt and pepper and toss well.
Roast for about 30 minutes, stirring occasionally, until cauliflower is tender and golden brown.
Serve hot or at room temperature.
