Planning interviews that are well planned and carefully implemented allows you to find applicants who are the best fit for your program. When the interview process is a clearly defined process including a variety of components, this ensures that all applicants were given an equitable interview process. Ideally, at the end of the interview process, both you and the applicant(s) will consider the experience worthwhile and informative, regardless of who is ultimately selected.
