Seppankizangu Roast

Makes : 4 serves

Ingredients:

Seppankizangu – ½ kg

Chilli powder – 1 teaspoon

Hing - ¼ teaspoon

Curry leaves – 10

Salt – 1 ½ teaspoon

Oil – 1 tablespoon

Mustard seeds – 1 teaspoon

Cumin seeds – ½ teaspoon

Turmeric powder – ½ teaspoon

Special masala powder – 2 teaspoons

Coconut oil - 1 teaspoon

Method:

  1. Wash seppankizangu thouroughly.
  2. Boil it in a kadai till jus cooked.
  3. Peel off the skin & slice into thin pieces (thickness as desired).
  4. Heat oil in a pan.
  5. Add mustard seeds & allow spluttering.
  6. Add cumin seeds, hing & curry leaves.
  7. Add sliced seepankizangu, chilli powder, salt & turmeric powder.
  8. Fry in low flame until all pieces turn golden brown in colour.
  9. Add the special masala powder fry for 2 more minutes.
  10. Add coconut oil & mix well. (imparts a good flavour)
  11. Can be served with rice & sambar/rasam.
