Pagarkai Fry

Pagarkai – ½ kg
Salt – 1 ½ teaspoon
Chilli powder – ½ teaspoon
Turmeric powder - ¼ teaspoon
Hing – ¼ teaspoon
Besan – 4 teaspoons
Rice flour – 2 teaspoons
Tamarind extract – 2 teaspoons
Oil – adequate to deep fry

Method:
- Cut pagarkai into thin slices.
- Dilute the tamarind extract with a tumbler of water.
- Boil sliced pieces in this water. (Be cautious not to overcook)
- Add salt, chilli powder, turmeric powder, hing , rice flour & besan.
- Mix all ingredients thoroughly sprinkling some water if needed.
- Heat oil & fry pieces till golden brown.
