Corn Salad
Makes: 2 to 4 serves

Boiled corn kernals – 1 cup
Onion, tomato, carrot, capsicum –1 cup
(all combined together - finely chopped I used ½ onion, ½ tomato, ½ of a small carrot ¼ of a capsicum)
Lemon juice – from ½ a lemon
Salt – ½ teaspoon (flat)
Chilli powder – ¼ to ½ teaspoon (depending on spice levels)
Chat masala powder - ¼ teaspoon
Coriander leaves – 2 teaspoons (finely chopped)

- Chop all the veges finely.
- In a bowl add boiled corn and all the finely chopped veges along with salt, lemon juice, chilli powder and chat masala powder.
- Combine well using tongs or spatula.
- Garnish with chopped coriander leaves and serve.
