mushroom quish

Mushroom Quiche
1 Tbsp butter
1/2 pound mushrooms, sliced (I used oyster, shitake, & button mushrooms)
1/2 medium onion, chopped
1 cup grated swiss cheese
1/2 cup grated parmesan
1/2 tsp thyme
1/2 tsp oregano
8 large eggs
2 cups milk (I only used 1 cup because my pan was too small)
1 cup heavy cream
salt and pepper to taste
Heat oven to 375 degrees. Melt butter and saute mushrooms and onions until soft. Spread 1/2 swiss and parmesan cheese in bottom of a greased quich or pie pan (must hold 6-7 cups). Top with mushroom mixture. Sprinkle with remaining cheese.Sprinkle with thyme and oregano. Whisk eggs, milk, cream, salt and pepper; pour over ingredients in pan. Bake for 35-45 minutes, until set and golden brown.
