Cheese Rolls (Pao de Queijo)
This is a Brazilian recipe
Ingredients:
4 cups manioc starch or tapioca flour or starch
1 tsp salt
4oz parmesan cheese
1 cup + 3 tbsp whole milk
2 tbsp butter
3 large eggs
1 tblsp canola oil
Method:
Preheat oven to 425 F.
In a large mixing bowl combine starch with salt.
Bring 1 cup milk and butter to a boil over medium-high heat and pour over the flour, mix. Allow to cool for a bit.
Add eggs, one at a time, mixing each into the dough before adding the next.
Add the final 3 tbsp of milk to the dough, a spoonful at a time, until the dough is smooth. If the dough feels dry, add a little more milk, but no more than 1 tbsp. Knead dough in the bowl until all ingredients are well blended and the dough is smooth. Add the grated cheese and mix into the dough.
Lightly grease the plams of your hands with some oil. Take a piece of dough the size of a ping pong ball and roll it into a ball. place on a baking sheet and bake for 10 mins. Reduce heat to 375 F and bake for an additional 10-15 mins. until the rolls are a light golden brown.
