Contrary to the photo, this is all about dried pea recipes. However, green mush is hard to get nice photos of.
I know you may be dubious, but I promise this is delicious :)
Recipe 1. I started by chopping and sauteing an onion and some salt pork (bacon would also be fine). I added water and when was boiling, split peas. This stayed on the stove for a few hours until the peas were totally soft. I mashed the peas with the back of a spoon, seasoned with salt, and added some grated cheese. Is it a strange colored mash? Yes! It is, however, totally delicious.
If you are feeling especially awesome, you can also toast the dry peas first, in a little oil or fat.
Recipe 2. Make the same peas as above, but when they are done, instead of cheese, add some flakes of smoked salmon. This is also delicious with a little seaweed (no, really!)
Recipe 3. "hummus". We are fairly used to bean dip modernly, and this one is fantastic.
There are two ways to make this. Both start by boiling and mashing the peas.
Version 1 (the fast way).
Add some melted butter (or bacon fat), soured something (I like the liquid off my fermented onions), some skyrr (or yogurt), garlic, and if you want it, some chopped cilantro.
Version 2 (the slow way).
Mix some skyr (or yogurt) whey into the peas. Cover, and ferment until sour (may be as short as 24 hours, or as long as several days, depending on the weather).
Once sour, add garlic, and if you want, some cilantro. Taste, if not creamy or "fat" enough, add butter and skyrr.
