Reading back over my old recipes, I've come a long way, but I think I still also have a long way to go. For example, I need to reorganize this whole section of the site! But for now, I am just going to post the recipes I made last summer and call it good. All of these were a hit. I took them out wandering in a small cooler (in ziplock bags) with ice. In my backpack I had a garbage bag, and small paper plates and plastic spoons. Worked great.

<> Salted fish (FISHY FISHY FISHY)

I bought some thin fillets of cod and a big box of salt. I used a plastic bin. As soon as I got home from the store, I patted the fish dry, then rubbed liquid smoke all over the fillets. I put about an inch of salt in the plastic bin, then laid a bit of fish flat on it, covered in tons of salt, and repeated. I kept that in the fridge for 48 hours. It is quite delicious, though you might want to rinse it, or even soak it a bit and then cook it, it is VERY salty

<> Toasted barley.
I took RAW barley (pearled), and put it into a hot pan with oil/butter/bacon fat. I stirred it every few minutes, until the barley was dark golden with brown bits but no black bits.
Then I added water and boiled it until done.
<> PEAS.
I cooked dried peas in water with sauted onions and garlic and smoked salt. These are really THICK, like, you can eat it like foo-foo in little patted finger-fulls.
<> Pulled pork.
I sauted an onion, added dried cherries, whole mustard seed, and water, then a big chunk of pork. Cooked until pullable, added salt, and processed mustard until delicious. I used bacon fat to start, and there were chunks of bacon in the finished product, that was really good

<> VEGETABLES. This was soooooooooo good, OMG.
I sauted: lots of onions, some garlic, pre-boiled turnips, carrots, oyster mushrooms, button mushrooms (bug off, I'm part Baltic!), kale, and tons of fine shredded cabbage. I added some sour cream and shredded montery jack cheese.

Savory:
To non-toasted, cooked barley, I added sour cream, feta, chopped parsley, salt. Top with smoked fish bits. This is one of the crowd
favorites, I make this one alllll the time. We had this as a side with steaks one night.
To non-toasted barley cooked in vegi broth, I added the vegi mix (see above), skyr and sour cream, shredded monteray jack cheese, and salt. I also made this into fritters.
I also did the above with the toasted barley.
Sweet:
Non-toasted barley with skyr, fresh cherries, and chopped dried cherries, also some fine ground hazelnuts.
Toasted barley with skyr. I grilled peaches, then stewed them with a little smoked salt and honey.

Same with the peach mush.

I tried to put a bunch of these together in one pot, and it wasn't good. I cooked pork, then added barley, then peas. Even with all the right seasonings, this is just not delicious. Meh. Maybe better as soup? Whatevah, fail.
