Bacon soup with kale and mushrooms.
I fried finely chopped onions, finely chopped bacon, and halved button mushrooms. Then I added a bunch vegetable broth, and brought it to a boil. Then I added a bunch of roughly chopped kale.
This needs to be served AS SOON as the kale is soft
If left to sit too long, the bacon gets oddly soft, the kale looses texture, and the broth gets greasy.
If eaten fresh, this stuff is FANTASTIC. The kale and mushrooms have a very meaty texture, and it's bacon broth, so, really, who can object :)
Rational is this: in the middle of winter, the meat is not plentiful and is preserved. The kale will grow forever (it grew in the snow in Bellingham), and mushrooms can be found pretty late in the year, and dried, kept for long periods of time. This is a way to feed a bunch of people on only a little bacon :) Plus it is ridiculously yummy. Next time I want to try using ham instead of bacon.
