She has 3 different levels to her program. Here are some sample menus:

The protein is 2 to 3 times what is required for muscle maintenance. So the excess protein converts to glucose via glycogenesis. This is a waste and research indicates increases the odds of many diseases of excess--cancer is the big one.
Also, the fats are high, however, the saturated fats are from 23-57 gm/day. Dr. Swank suggested keeping saturated fat below 20 gm per day for MS. The saturated fats Dr. Wahls suggests tends to be shorter chain fatty acids. If you subtract the short chain and medium chain fatty acids off the remaining saturated fat, it fits closer to Dr. Swank's recommendations for MS.
Even though she touts eating lots of veggies (9 servings per day). The serving size appears to be about 1/2 cup. Even with these number of servings the fiber is between 16 and 31 gm per day. IMHO this is too low. It should be at least 50 gm/day for good gut and bowel health.
