Right now a teacher is looking after the cats but we need someone to adopt them because if no one adopts them then the cat family is going to go back onto the streets and we don't want that so please, please adopt the kittens and/or the mother cat!!!!!! Rainbow of Vegetables and Fruits
Everyone knows that eating enough vegetables and fruits (V&F) is essential for proper child development. While focusing on amount, though, we often forget that our bodies thrive on variety—a rainbow of nutrients. Fruits and vegetables get their colour from vitamins and phytonutrients, which are crucial for good health.
Colour variety on your plate may lower the risk of missing out on all vital nutrients. For example, red-coloured V&F is rich in lycopene, which has potent cancer-fighting and heart-protective effects. Orange and yellow are rich in vitamin C and carotenoids that promote healthy vision and cell growth. Some colours are easy to get; others (like purple and blue) are not that popular, especially among children. And it’s a shame, as the purple-coloured F&V contain anthocyanins.
Studies have linked these powerful antioxidants to a wide variety of health benefits, including increased longevity, cardiovascular health, cancer prevention, vision improvement, and neuroprotective effects. This is why we try to enrich meals with anthocyanin-rich foods like eggplants.
Eggplants are a nutritional powerhouse and can be a terrific part of a healthy diet. They are full of fibre as well as many vitamins and minerals (B3, B6, C and K, and magnesium, potassium, folic acid, etc).
The glossy, purple, teardrop-shaped, and overall beautiful eggplant, however, has been surrounded by myths throughout centuries. Next time, we will revert with a thorough explanation of why eggplant is not dangerous but very good for us.
Yours,
Food Committee
