Power Bites
Materials Needed:
1 large bowl & spoon for mixing
1 cookie sheet or large plate for finishing
Parchment paper or foil (optional)
measuring cups
measuring spoons
Ingredients:
1 1/4 cup Old Fashioned Oats
2 Tbsp Chia seeds, flaxseeds, or hemp seeds (optional)
1/2 cup nut butter of choice (peanut, almond, sun butter, etc.)
1/3 cup honey or maple syrup
1 tsp Vanilla extract
1/4 tsp Salt
1/2 cup mix-ins (choose one or several):
Chocolate Chips (white, semi-sweet, M&Ms, etc.)
Raisins, dried cranberries, or other dried fruit.
Chopped almonds or walnuts
What you’ll do:
Wipe down surfaces and equipment, and wash hands.
Add all ingredients to the mixing bowl.
Mix until you reach a chunky, sticky consistency which will stick together when pressed into a ball.
If mixture is too dry, add more nut butter.
If mixture is too wet, add more oats.
Refrigerate mixture in large bowl for 30 minutes.
Have everyone wash hands again to prepare to scoop/roll the bites.
Divide dough into equal portions for each participant, so that campers can each scoop/roll their own portion of Power Bites without touching the rest of the dough.
Using a spoon, scoop mixture into ~1 inch size balls (about the size of a ping pong ball). Place on tray or plate. If desired, refrigerate for up to 30 mintues to help the bites firm up and set (however, they can also be enjoyed right away).
