Warning: the video misstates that converting the channel data into energy and then re-fitting will provide you directly with the  all the uncertainties.  That statement would be correct if there was no uncertainty involved in the conversion process.  However, as stated in this video both, Ey, the energy of the gamma and velocity between the extreme peaks have an associated uncertainty and this should be taken into consideration when you state your final values!
