Food and Nutrition
Recommended Grade Level: 10-12 grade
Length of Course: 1/2 Semester (90 Minute Block)
Course Description: This class provides students with knowledge and skills about food preparation with a strong emphasis on nutrition and nutritional analysis, balanced diets, and satisfying special dietary needs. Includes safety and sanitation proper sue of equipment, meal planning and preparation, current food issues, the role of food in the family and global society and the demonstration of teamwork skills.

FCS 12.1 Evaluate and analyze the nutritional needs of individuals and families in relation to health and wellness across the lifespan.
12.1.1 Analyze the effect of nutrients on health, appearance and peak performance
12.1.2 Analyze the relationship of nutrition and wellness to individual and family throughout the life span.
12.1.3 Analyze the effects of food and diet fads, food addictions, and eating disorders on wellness
12.1.4 Investigate the impact of global and local events and conditions on food choices and practices
FCS 12.2 Evaluate factors that affect food safety, from production through consumption.
12.2.1 Determine and demonstrate conditions and practices that promote safe food handling
12.2.2 Analyze food borne illness factors including causes, foods at risk, and methods of prevention commercially and by individuals and families
12.2.3 Analyze federal, state, and local inspection and labeling systems that protect the health of individuals and the public
FCS 12.3 Demonstrate the ability to acquire, handle, and use foods to meet nutrition and wellness needs of individuals and families across the life span.
12.3.1 Apply various dietary guidelines in planning to meet nutrition and wellness needs
12.3.2 Design strategies that met the health and nutrition requirements of individuals and families with special needs
12.3.3 Demonstrate ability to select store, prepare, and serve nutritious and aesthetically pleasing foods
