Identify types of adverse reactions to foods
Differentiate food allergies and intolerance
Recognize importance of nutrition education and counseling in managing adverse reactions to food
As many as 15 million people have food allergies with 8% of all children suffering from food allergies. In 2013 the Centers for Disease Control and Prevention estimated that food allergies among children increased by 50% between 1997 and 2011. With no cure for food allergies, strict avoidance of foods containing allergens and knowledge on identifying allergen containing foods is vital to minimize allergic reactions. Even larger numbers of individuals report food intolerance, which are not true allergic responses, but do provoke undesirable symptoms in individuals.
