Easy Oven Roasted Green Beans and Mushrooms
Ingredients
1 pound of fresh green beans, washed and trimmed
8 ounces fresh mushrooms, washed, sliced (I use baby portabella mushrooms, sliced)
2 teaspoons minced garlic
1 1/2 Tablespoons extra virgin olive oil
1 1/2 Tablespoons balsamic vinegar
fresh cracked black pepper and sea salt to taste, about 1 teaspoon each
Directions
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or foil for easy clean-up.
Wash and trim green beans and mushrooms, dry well with paper towel.
Place green beans and mushrooms in a large bowl, add garlic, olive oil, balsamic and salt and pepper - toss with hands, coating green beans and mushrooms evenly.
Place green beans and mushrooms on baking sheet in an even, single layer.
Bake in middle rack of oven for 20-23 minutes, until green beans reach desired tenderness. Enjoy!
Tip
Finely grated Parmesan cheese sprinkled on top after roasting is a great addition.
