Cilantro Lemon-Lime Egg Salad

Ingredients

• 5 hard boiled eggs chopped

• 1 tablespoon of cilantro chopped

• 1 tablespoon diced green onions

• 1 tablespoon diced red onion

• 1 teaspoon lime juice

• 1 teaspoon lemon juice

• 1 tablespoon of Mayonnaise (any kind, light, reg - not Miracle Whip)

• fresh cracked pepper to taste

• salt to taste (I used sea salt)

Directions

Place all the ingredients in a bowl and lightly fold/mix everything together.  Serve on a bed of lettuce, favorite bread or crackers.
