Easy Bisquick Chocolate Chip Cookies
Ingredients
1/2 cup butter (salted), softened to room temperature
1 cup light brown sugar, packed
1 egg
2 teaspoons pure vanilla extract
2 3/4 cups Bisquick Pancake & Baking Mix
1 cup semi-sweet chocolate chips (more if you like)
Directions
Preheat oven to 375 degrees f.
In a large bowl, cream butter and brown sugar until smooth, then add egg and vanilla, mix until well blended. Next add Bisquick, mix until well blended (do not over mix). Last, add chocolate chips, mix until evenly blended (do not over mix).
Drop rounded tablespoons of cookie dough about 2 inches apart onto ungreased cookie sheet(s). If needed, you can flatten them slightly before baking.
Bake on middle rack of oven for 8–10 minutes until edges are golden brown. When ready, remove from oven, allow to cool a few minutes, then transfer to cooling rack. Enjoy!
Tips
I use a medium Pampered Chef scooper, the recipe makes 2 dozen good size cookies.
If needed, you can flatten them slightly before baking.
If you like nuts, add 1/2 cup of chopped pecans/walnuts.
Adjust baking time according to how fast/slow your oven bakes.
