Steamed Sandesh is a soft, aromatic milk-based sweet made by gently steaming fresh Chhena (cottage cheese), which gives it a delicate, melt-in-the-mouth texture.
This light and flavorful dessert can easily be prepared with minimal sugar, making it a healthier option for those seeking a guilt-free indulgence or a more balanced addition to their diet.
Ingredients
2 litre full fatmilk
3 tbsp Lemon Juice
¼ Cup Powdered sugar
¼ Tsp Cardamom powder
8 to 10 Saffron Strands
1/4 Cup Milk at room Temperature
Instruction
Prepare the Chhena (cottage cheese) by following the steps outlined in the “How to Prepare Soft Chhena for Milk Sweets” section.
Transfer the freshly prepared soft Chhena to a grinder jar and blend for 1 to 2 minutes until smooth.
Add ¼ cup of milk, ¼ cup of powdered sugar, and a pinch of cardamom powder. Grind again to form a smooth, batter-like consistency.
Grease a baking tray or deep steel plate lightly with ghee. Pour the smooth Chhena batter into the tray and spread it evenly. Gently tap the tray on the counter to release any air bubbles.
Sprinkle a few saffron strands or sliced pistachios on top for garnish.
In a deep pan, bring water to a boil for steaming. Place the baking tray on a wire stand inside the pan. Cover with a lid and steam over medium heat for about 30 minutes.
Once done, turn off the heat and carefully remove the baking tray from the steamer. Allow it to cool completely, then refrigerate for 30 minutes to set properly.
Cut into small square pieces.
Your Steam Sandesh is now ready to be offered.
