Ingredients:
1 cup Maida or all purpose flour
⅓ cup Clarified butter or ghee
Pinch of salt
½ cup sugar and 1/4 cup water for syrup
Cardamom powder 1 tsp
oil or ghee for deep frying
Process:
Put flour, clarified butter and saltl in a bowl and mix it well. After kneading nicely with the clarified butter, the flour should appear crumbled. You should be able to make a ball when you hold some flour tightly in your fist, then the flour is ready to male a dough.
Slowly add water to make dough. Knead it for another 5 minutes until it's smooth and tight. Keep it covered for 15 minutes.
Take a small amount of dough and roll it to make a flat elongated circle. It should be ⅓ inch thick.
Cut this circle lengthwise into 2 inch thin rectangles or Khurumas.
Keep a Kadhai with ghee or oil in medium flame. Once the oil is warm, add these rectangle into oil. Fry them into low to medium heat till the color changes to golden.
Remove them from oil and keep it aside in a bowl.
Prepare separately the sugar syrup by heating ¼ cup water with ½ cup sugar and cardamom powder until it becomes a good thick syrup. Switch off the heat when syrup becomes sticky and has less moisture in it.
Now pour down the Syrup on the rectangle Khudumas and mix them well quickly so that each piece is nicely coated with sugar. It has to be quick, otherwise sugar syrup will become hard and it will not mix with the Khuruma pieces.
Let it cool and rest for an hour so that the syrup and Khurumas pieces are nicely set.
Offer these Khurumas to Lord Jagannath.
