Khira/Chhena Khir
Khira/Chhena Khir
Khira or Cheena khir is a rich delicacy made with freshly curdled soft paneer in sweetened, condensed milk infused with saffron and cardamom.
Ingredients
Milk – 1/2 litre
Cheena - 1 Cup
Sugar – 1/2 cup
ghee or clarified Butter - 2 Tbsp
Cardamom Powder – 1/2 teaspoon
Saffron Strands – 1 teaspoon
Sliced Pistachios – 1 tablespoon
Golden raisins - handful(optional)
Recipe:
In a thick-bottomed pan, add 1 tablespoon of ghee. Add 1 tablespoon of sugar and cook on a low flame until it caramelizes.
Pour in the milk and let it simmer on low heat, stirring occasionally, until it reduces to half its original quantity. This should take about 30–40 minutes.
Add sugar, cardamom powder, and saffron strands. Continue boiling for another 5 minutes.
Meanwhile, in another pan, lightly roast the fresh crumbled chhena (paneer) with 1 teaspoon of ghee. Set aside.
Gently add the chhena to the reduced milk. Let it simmer on low heat for 10–15 minutes, stirring occasionally to prevent sticking.
Turn off the heat and allow the mixture to cool slightly.
Garnish with saffron strands and chopped pistachios before serving.
