1 T. salt
4 C. haricots verts, washed and stem-ends removed
ice
Dressing:
1/4 C. grapeseed oil or walnut oil
1/4 C. sesame oil
1/4 C. honey
1/4 C. rice vinegar
In a mediium-large pot, bring water and salt to a boil. Parboil haricots verts for about 1-2 minutes. Drain and immediately plunge into an ice water bath. When cooled, drain and dry well with a clean towel or paper toweling. Set aside.
Combine dressing ingredients in a working glass. Whisk to emulsify. See notes (1) and (2).
Make sure haricots verts have no excess moisture. Dress haricots verts with 1/3 cup - 1/2 cup of the dressing. Toss with your hands. Save remaining dressing for another use.
Tips & Notes:
(1) Measure honey after one or both of the oils so that honey easily slides out of measuring cup.
(2) You know how whisking with one hand can be tiring? Use two hands to whisk and you can whisk forever! Place whisk in liquid. Position the whisk between the palms of both hands and rubs your palms together back and forth like you are trying to warm them up.
