1 C. shoyu
½ C. wasabi powder
1 C. rice vinegar
1 C. lemon juice
12 lbs. sashimi, cubed
3-4 packages kaiware, cut into 1" lengths
¾ C. sesame seeds, toasted, for garnish
Combine dressing ingredients.
Combine sashimi and kaiware.
Toss sashimi with dressing.
Arrange in small "momiji" leaf paper cups.
Sprinkle with sesame seeds.
Line up on blue cafeteria trays. Stack, if necessary.
