5 lbs. chicken breasts
water
1 hand of ginger, sliced into coins and bashed
1-2 bunches scallions, chopped in 3" lengths
1/4 C. Sichuan peppercorns
15 star anise
1 C. Shiaoxing rice wine
10 scallions, sliced on diagonal
1/2 C. ginger, peeled and julienned
1 C. peanut oil
1/4 C. sesame oil
