Yields: 1 drink
Prep time: 5 minutes
Measuring spoons
Cocktail shaker
½ ounce blue curaçao syrup (see notes section below for better-for-you option)
1 ounce lime juice (see Note 1)
2 ounce pineapple juice
2 ounce coconut water (no sugar added)
1 tablespoon coconut milk or cream of coconut (see Note 2)
1 ounce non-alcoholic rum (optional)
Extra fruit and/or edible flowers for garnish
Add all ingredients (except the garnishes) to a shaker with 3-4 cubes of ice. Shake for around 15 seconds to combine, then strain over fresh ice and garnish with extra fruit and/or edible flowers. Serve immediately.
Note 1 - lime juice: adjust this amount to ½ ounce (15 ml) lime juice if you're more of a sweet tooth. I find tropical mocktails very sweet and will often use extra lime juice to balance it out, so find an amount that works for you. If unsure, start with ½ (15 ml) oz, shake, have a little sip from the shaker, then add more and shake again if you wish.
Note 2 - coconut cream or cream of coconut: coconut cream will give a milder, creamier flavor whereas cream of coconut will offer additional sweetness.
Try my nourishing Blue Hawaiian Mocktail:
¼ teaspoon blue spirulina powder
1-2 teaspoons hot water
1 oz (30 ml) lime juice
2 oz (60 ml) pineapple juice
2 oz (60 ml) coconut water
1 tablespoon coconut milk
Optional: 1 oz (30 ml) non-alcoholic rum
Place the blue spirulina and hot water in a small bowl and stir to combine. Leave to cool for a few minutes then add it to a shaker with the remaining ingredients and some ice. Shake for around 15 seconds to combine, then strain over fresh ice and garnish with fruit and/edible flowers
A note on color: the drink pictured in this post uses blue spirulina as the base. If you use blue curacao, the end result will be more of an aqua color.
Nutrition Notes: nutritional information is calculated using spirulina powder and coconut cream.
