Ingredients:
Fresh Spinach
1 shallot – thinly sliced
3 plums – pitted and thinly sliced
3 Tbsp Fig Balsamic Vinegar©
3 Tbsp Blood Orange Fused Extra Virgin Olive Oil©
Pinch of salt
Pinch of pepper
Goat Cheese - crumbled (El Camino de Las Cabras©)
Toasted pecans
In a bowl, whisk together the vinegar, salt and pepper. While whisking, slowly add the olive oil. Once it is whisked together, add the spinach, shallot, goat cheese and pecans and gently toss to coat everything. Serve.
