Chicken con Broccoli

Ingredients:

• 4 boneless, skinless chicken breasts

• 2 t. extra virgin olive oil©

• 4 ½ oz. pasta©

• 1 c. heavy cream

• 2 T. butter

• 2 t. minced garlic

• 2 t. cornstarch

• 1 c. broccoli florets

• 2 T. parmesan cheese©

• black pepper (to taste)©

• salt (to taste)©

1) Boil pasta in salted water.

2) Cook chicken over medium heat in olive oil.

3) Turn heat to low. Take chicken out of pan and let pan cool a bit. Cut chicken into

bite-sized pieces.

4) Saute garlic in butter over low heat.

5) Stir in heavy cream, cornstarch, broccoli, parmesan cheese, and salt and pepper.

6) Mix in drained pasta and diced chicken and serve.

Serves 4.
