A simple Greek salad that packs a lot of flavor.
Ingredients:
• 3 tomatoes, seeded and chopped
• 1 English cucumber, diced
• 1 small red onion, sliced
• ½ cup pitted kalamata olives ©
• ½ cup olive oil ©
• ½ lb. feta cheese, crumbled ©
• 1 T. chopped fresh oregano
• Salt and pepper

1) Combine first four ingredients in a bowl.
2) Drizzle with olive oil.
3) Sprinkle with feta and oregano.
4) Add salt and pepper to taste
*You can also add diced bell peppers for more flavor and color.
Serves 8.
