Ingredients:
1lb Pasta (Bucatini, Capellini, Linguine, etc.)©
1 Garlic clove (peeled and cut in half)
2 Lemons (zested and juiced)
1/2 Cup Pine Nuts (toasted)
1/4 Cup Shredded Parmesan
3 Tbsp Extra Virgin Olive Oil©
Salt
Pepper
Cook the pasta in salted, boiling water until al dente. In a large serving bowl, rub the inside of the bowl with the garlic, discard the garlic. Add the lemon juice, olive oil, lemon zest, a teaspoon of pepper and a teaspoon of salt to the bowl and whisk to combine. Drain pasta and add to the bowl. Toss the pasta in the bowl to coat it with the mixture. Sprinkle on Parmesan cheese and serve.
