I used a CNC router to cut an angled, swooping slit profile I designed into the top of an oak board, in order to accept the wire of the cutting hardware. After the slit was cut, I milled a blind hole through the side for the hardware arm, which is captured by the tensioned wire running up through the slit.
I rounded out the corners of the board with a file, and applied several coats of food-safe butcher block oil to finish the cheese cutting board.
