Rice Pudding

1/2 c uncooked regular rice

1 c water

1/2 c sugar

1 tblsp. cornstarch

1 dash salt

2 @ eggs

2 1/2 c milk

1 tblsp. lemon juice

1/2 c raisins


Bring water to boil. Add rice. Reduce to low and cook for 20 min. Heat oven to 350 deg. Blend sugar,cornstarch, and salt. Beat eggs slightly. Add to sugar mixture; beat with whisk until frothy. Stir in rice, lemon juice and raisins. Pour milk in and blend well. Pour into ungreased 1 1/2 qts. casserole. Place casserole in pan of very hot water (1"deep). Bake about 1 1/2 hours, stirring occasionally, or until pudding is creamy and most of liquid is absorbed. Remove casserole from oven .
