Ingredients
1 pound salmon cut into 1/2 inch cubes
2 cups of fennel leaves
juice of 1-2 lemon
1/2 olive oil
garlic cloves 3
3 sprigs rosemary
1 cup breadcrumbs
Cooking
simple enough.
Take the lemon juice, the fennel and the salmon and mix them.
We will leave this in room temperature for 2 hours.
Every 30 minutes mix it and move it around.
Boil water.
add the salt.
Then cook the pasta.
Pasta takes 10-12 minutes.
While the pasta is cooking on medium heat place the olive oil, the garlic and the rosemary.
After 2-3 minutes the garlic will start browning up, discard it. It seeped into the oil.
After another minute, the oil will taste a little like rosemary. So discard the rosemary and turn the heat off.
Now.
We wait for the pasta to be ready.
when it is ready, fire up the oil.
Throw the salmon pieces on it, then brown them as best you can.
Add some pasta water for sauce.
Throw in the pasta and mix.
Adjust the sauce based on the pasta water.
When it is ready, plate it and then sprinkle the bread crumbs.
Bread Crumbs.
Simply take a piece of bread.
Toast it.
Then grind it in your vitamix or food processor.
Then fry 1 cup of bread with 2 tbsp of olive oil or more.
the goal is golden but NOT burned.
