Ingredients
Anchovies in olive oil.
Olive oil
Pennoni pasta the smooth kind
Mozzarella
Some green for decoration {parsley}
Cooking.
Heat the water to boiling.
Add salt
Cook the Pennoni for 12 minutes like the box says.
After 6 minutes.
Warm up 2 tablespoons of olive oil
as they are warming up drop a few anchovies.
The heat should be medium.
The anchovies will melt into the olive oil
simply help them along with a wooden spoon and some stirring.
When the pasta is ready, keep 1 cup of pasta water and drain the pasta.
Throw the pasta on the oil with the anchovies and let it cook
for a few seconds with limited moisture.
This will create the lovely browning you see in the photo.
When it is a little browned splash as much as think pasta
water and keep cooking. This will create a sauce.
If you like your sauce thick then not too much.
If you like it thin then more.
When you are done put it on a plate
and sprinkle some mozzarella and the chopped green parsley in my case.
It is an excellent pasta for lunch.
