Ingredients.
6 tbsp butter
1/2 cup olive oil
1/4 pound pancetta
8 spring onions chopped, white only.
1/2 breast chicken ground
1/2 pound beef
1 cup spumante
2 cups cream
nutmeg {i can't use this as my wife is alergic}
salt and pepper.
Making this
so, very simple.
Cook the pasta.
It takes 15 minutes or so for rigatoni.
So you have time.
When it hits 10 minutes left in the timer.
add the oils.
1 minute
Add the pancetta.
1 minute
Add the green onions
1 minute.
By now you can add the ground chicken breast and the ground beef.
mix and leave.
2-3 minutes later you should have everything a little browned for taste.
Add the spumante 1 cup.
Minute 7 or 1 minute later add the cream.
Keep cooking and mixing till the cream starts thickening.
by minute 10 you are ready with the pasta and the cream is thickening up.
Mix the two.
Add some pasta water if you need it runnier
and voila.

That i Clivi was excellent and I don't like fizzy wine.
