Ingredients
1/2 pound creme fraiche
http://en.wikipedia.org/wiki/Cr%C3%A8me_fra%C3%AEche
Basically sour cream.
1 orange zest.
1 pound pasta, I used fettuccine
Some parmesan or pecorino romano for taste.
Some green for taste.
Cooking
Simple,
Cook the pasta for the minutes it says on the box.
While the pasta is cooking, grate one orange using a grater.
Throw the grated orange in a frying pan and cook.
Add some water from the pasta water, the goal is to cover the
orange zest but not drown it.
After 3 minutes it will be soft.
Turn it off.
When the pasta is ready, keep 1 cup of pasta water
and drain the pasta.
Put the pasta in a bowl.
Throw the orange zest which was boiled on it.
Mix.
Throw the creme fraiche on the pasta and stir.
The creme creates the sauce, if you need it to be runnier add some pasta water, if it is too runny for you.
Take the whole thing and throw it back on the frying pan at high heat for 1 minute.
This is the pasta.
Decorate with some cheese
and throw some leaves for decoration.
Then grind some pepper.
The pasta should be salty enough because you added some
pasta water with the salt and the pasta was in the salt.
Different people like different salt levels, so worst case scenario
they can shake some salt on the pasta.
