Walleye {white fish} tortillas.
First the Walleye, this is a fresh water fish that you can get in the areas of the great lakes.
I added some photo of some random dude who caught one.
The fish is medium flaky. This makes it hold its shape when you pan fry it for the tacos.
To get started remove the skin.
Then cut into small bite size bits.

The above is an ok recipe.
The key in it is to throw them into a sealed container when you are done so they
will remain pliable and moist.
I didn't with the first one so it was like a cardboard piece.
The second is to use boiling water vs hot water.
The third is to let it sit more than 30 minutes. I'd say an hour.
But anyway, if you can't be bothered with this you can buy some from the Super.
I don't care for that as then I am stuck with tortillas at home which go bad after a while.
Third
The salad.
I just chopped some endive, green onion avocado and lettuce.
Fourth
The fish.
Just season it with what you want.
In my case I used aleppo pepper {you can use paprika} salt, pepper and coriander.
Heat up oil in a frying pan.
If you like olive oil use that , if you want more "fish" taste use corn oil.
Fry them while shaking the pan to move them around so they get color on all sides.
Every 30 seconds you can taste one {being a cook does have advantages}
When they are done, remove them from the heat and put them in a plate
so they won't keep cooking in the hot pan.
Now leave it as a buffet, each person can load what he wants.
Then drizzle the condiments he wants.
My wife for example adds mayonnaise.
