pavlova

ingredients

4-5 eggs

1 cup castor sugar

1 dessertspoon cornflour

1 teaspoon white vinegar

vanilla


method

Separate eggs carefully, one at a time, keeping the whites. With an electric beater or hand egg-beater beat whites for 5 minutes until peaks form. Gradually add castor sugar while continuing to beat. Remove bowl from beater and carefully fold in cornflower, vinegar and few drops of vanilla. Spoon mixture in a heap in the centre of a pavola plate or aluminum foil covered baking sheet, then push it down as shown in photo. Place in oven set at 150°C (very low oven) and leave for 1¼ hours.

When cool, cover with whipped cream and fruit (kiwi, strawberries, banana).
