banana cake

ingredients

3 over-ripe bananas

1 cup self-raising flour

third of a cup wholemeal flour, bran or wheatgerm

½ teaspoon cinnamon

125 grams margarine

½ cup sugar

2 eggs

vanilla

(optional- walnuts or pecans)


method

Lightly grease a small sized cake tin. mash bananas roughly. Sift flours and spice. Cream margarine and sugar with wooden spoon. Stir in eggs, vanilla, mashed banana, then sifted flours. Don't stir too much, just enough to combine the ingredients. Its nice to have bits of banana left in the mixture. If the mixture seems too dry add some (soy) milk. Spoon into cake tin and bake in moderate oven (190°C) for approx 40 minutes.

icing (optional)

Beat together with wooden spoon: half a pack cream cheese (you can use tofu "cream cheese"), third to half cup castor sugar, and rind of 1 lemon or lime. Spread over cooled cake, decorate with walnuts/pecans if desired.
