125 grams margarine
½ cup caster sugar
2 eggs
1¼ cups self raising flour
⅓ cup caster sugar
rind and juice of 1 lemon
rind and juice of 1 orange
method
Lightly grease a small sized cake tin. Cream margarine and sugar with wooden spoon. Add eggs and mix well. Sift in flour, fold in (don't stir too much) spoon into pan and bake at 180°C for 30-35 minutes. Combine sugar, rind and juices in a saucepan, stir over low heat until sugar is melted (don't boil). Turn cake out on cooler with a dinner plate underneath, spoon over hot topping, then repeat with excess topping from plate. Serve warm or cold with cream/icecream.
