lumberjack cake

ingredients

1 cup grated apple

180 grams dates

1 teaspoon bicarb soda

1 cup boiling water

1½ cups plain flour

120 grams margarine

½ cup sugar

2 eggs

(vanilla)


method

Chop dates and remove pits, then mix apple, dates, bicarb and water, leave for 10 minutes. Lightly grease a small round or loaf tin. Sift flour. Cream margarine and sugar with wooden spoon. Stir in eggs and vanilla, apple mixture, then sifted flour. Don't stir too much, just enough to combine the ingredients. Spoon into tin and bake in moderate oven (190 °C) for approx 1 hour


topping (essential!)

Mix together 60 grams margarine, third cup brown sugar, third cup soy milk and 60 grams shredded coconut. When the cake is done, remove from oven and turn out on a wire rack, smooth mixture on top of cake, and place under griller for 5-10 minutes. Be careful not to burn the coconut, it should caramelize on top. Serve hot or cold.
