chickpea salad

ingredients

1 clove garlic, finely chopped

2 tablespoons olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon fresh grated ginger

½ teaspoon ground paprika

1 teaspoon ground cummin

400g can chickpeas, rinsed and drained

8-10 cherry tomatoes, halved

½ red onion, thinly sliced

2 tablespoons chopped flat-leaf parsley or coriander

salt and fresh-ground black pepper


method

Whisk dressing ingredients together, toss into salad and leave for a few hours for flavours to develop. Serve with extra paprika and chopped parsley.

alternative: 1/2 cup couscous, cook as directed then stir through.
