clafouti aux cerises

ingredients

1 cup milk

½ cup heavy cream

⅓ cup sugar

⅔ cup plain flour

2 eggs

1 egg yolk

1½ teaspoons vanilla extract

3 cups pitted cherries

pure icing sugar to dust the top


method

blend all ingredients except cherries until smooth with a blender/stick mixer. arrange cherries in a buttered 10-inch pie plate and pour the batter over them. Bake at 190°C for 35-45 minutes, or until the flan is puffed and golden. Sift icing sugar over the top and serve warm with cream.
