(vietnamese rice paper rolls)


ingredients

rice paper sheets

bean thread vermicelli

1 green mango or piece of green papaya

carrots

marinated tofu

eggs

bean shoots

fresh mint or coriander (cilantro)

cucumber


dipping sauce:

hoi sin sauce with some coconut milk added (warm together in small saucepan)

or

nước mắm (viet fish sauce, vegetarian version is possible)


method

soak bean vermicilli, mix eggs and make a small omlette, cut omlette and tofu in long strips

grate carrot, green mango/papaya, cucumber, wash herbs

(you might want to add prawns, duck, pork etc, or other vegetables)

place cold water in a plate, soak rice paper sheets one at a time for a few seconds then fill with a small amount of each ingredient (put colourful things, mint etc on the outside) and roll up. serve cold with dipping sauce.
