1 Tbsp olive oil
2 onions, chopped (about 2 cups)
3 large cloves garlic, minced
1 pkg. (16 oz.) smoked sausage, sliced
4 cups beef broth
2 cans (14.5 oz. each) diced tomatoes, Italian style
1 medium, zucchini, halved and sliced
1/2 cup thinly sliced carrot
1.5 Tbsp. dried thyme
1.5 Tbsp. dried oregano
1 pkg. (9 oz.) refrigerated four cheese tortelloni
Grated Parmesan cheese, for serving
In a soup pot or Dutch oven, heat oil over medium-high heat until hot.
Add onion, garlic,, and sausage and saute until onions are tender, 5 minutes.
Stir in broth, diced tomatoes with juice, zucchini, carrots, thyme and oregano.
Bring to a boil, reduce heat and simmer uncovered, stirring occasionally, for 35 to 45 minutes or until vegetables are tender.
Season with salt and pepper.
Stir in tortelloni, reduce heat to medium and simmer for 8 to 10 minutes or until pasta is tender.
Divide among soup bowls and top with cheese.
